An iconic Indian dessert that embodies the essence of winter warmth and festive spirit, Desi Gajar Ka Halwa is made by slow-cooking fresh red carrots in creamy full-fat milk and pure desi ghee. This rich and fragrant sweet is a celebration of desi flavors blended with love, tradition, and a secret touch of nostalgia.
Ingredients (Serves 4–5)

1 kg fresh red carrots, grated

4 cups full-fat milk

5 tbsp desi ghee

¾ to 1 cup sugar (adjust sweetness as per taste)

½ cup mava/khoya (optional, adds richness)

1 tsp cardamom powder

¼ cup assorted dry fruits (cashews, almonds, pistachios)

Method
Step 1: Cooking the Carrots
Combine grated carrots and milk in a heavy-bottomed pan. Cook on medium heat, stirring often, until the milk evaporates and the carrots soften to a thick consistency.
Step 2: Adding Ghee and Sweetness
Mix in the desi ghee and cook until the halwa looks glossy. Add sugar and cook till it dissolves and the mixture thickens.
Step 3: Enriching the Halwa
Stir in the crumbled mava and cardamom powder. Cook for another few minutes until the smell of ghee and sweetness fills the kitchen.
Step 4: Garnish and Serve
Roast dry fruits in a little ghee until golden and sprinkle over the halwa before serving. Enjoy warm, a perfect winter treat or festival delight.
